宮城県生まれ。11か月の時、家族と共にカナダへ移住。アルバータ大学で比較文学にて博士号を取得。現在はこのアルバータ大学で教鞭をとっている。研究の興味は、ニッケイのアイデンティティや文化。これらの興味をもとに、幼馴染のサチと共にJapanese for Nikkeiというビジネスを立ち上げた。創立年は、カナダやアメリカだけでなく、スウェーデンや日本、オーストラリアのニッケイコミュニティから会員を得ることができた。今後もこのコミュニティを拡大することを願っている。Japanese for Nikkeiについて興味なる方はこちらのサイトをご覧ください。

日系料理とは？ロン・エルマレシェフとの会話

カナダの日系料理とは、いったいどんな物でどんな味をしているのでしょう。この質問に答えられる唯一の人物と言えば、コバチ日本食レストランのオーナーシェフ、ロン・エルマレさんでしょう。日本人とモロッコ人を両親に持つ彼は、イスラエルで生まれ、日本で育ちました。その後アメリカの大学に通い、今はカナダのアルバータ州に住んでいます。ロンさんの育ってきた環境や食生活は、日系料理への理解や楽しみ方など、独特な「味方」を提供してくれるのではないでしょうか。ここでは、コバチ日本食レストランの料理を紹介しながら、「日系料理」について考えていきたいと思います。アルバータ州シャーウッドパークという静かな町にあるコバチは、Festival Laneのプラザにあるこじんまりとした居心地の良いレストランです。環境に配慮した食材を使ったバランスのとれた食事を提供することをモットーとするこのレストランでは、シンプルで上品な料理を味わうことができ、地元のお客さんに高く評価されています。私がアルバータ―大学で研究していた頃は、よく友人とコバチで食事をしました。新型コロナウイルスが発生する前の話です。あの頃はロンさんの料理を食べて力をもらっていました。時間に余裕のある週末は、特にコバチに行くのを楽しみにしていました。鴨寿司や和牛のたたき、ホタテバターを美味しいお酒と一緒に味わうのはもちろんですが、ロンさんの食に…
